Has anyone noticed that when you convert from WAV to MP3, the format does not indicate Joint Stereo on the new beta version 8.0 267. Despite this issue I believe the sound quality is exceptional when compared to similar software. Any information would be appreciated.

The default must not be Joint stereo.  I use the Custom Quality (bitrate) setting and '-m j' as part of my command-line to the Lame Encoder and MJ reports Joint stereo on all my rips.  I have always used the Custom command-line in MJ because that's just the kind of guy I am.

This is not specific to media jukebox, but rather the default workings of Lame (The mp3 encoder used in media jukebox.)
Joint stereo (L|PLS|R or M|PLS|S frames) is defaulted at 160kbps and below. 192 kbps and above is Stereo (L|PLS|R frames only.) If you want to force Joint Stereo at higher bitrates select "Custom" from the dropdown list. Use -b192 -mj for example at 192 kbps. The -b flag choose bitrate in kbps. The -mj flag forces Joint Stereo. Or for a well tweaked setting try --alt-preset cbr 192 or bitrate of choice. I believe all of the alt preset modes are Joint or Safe Joint stereo.
