Is there any info on how to use Zones appropriately?

More importantly, Can I use zones to transmit the same music to different receivers, as in having the server function as a radio broadcaster, not just a file broadcaster?

Yes, you can, if you have more than one sound card or a virtual sound card with more than one output channel! Workd perfectly! It's one of the great features of MC9!

I have a big house with several rooms, each with a computer on a network and a stereo system. What would be nice is that the computer just locks into a streaming audio signal. This would allow the entire house to be on the same channel (so to speak).

Is this possible?

The zone method sounds like I would have to run speaker wires throughout the house :'(

I belive you can do that with Media Server. I on the other hand have a large house  as well (have a look at my webpage, there you'll see my setup) and I run interconnect cables, not speaker cables. That's a big difference, I run phono/mini jack cables to receivers and boom boxes all around the house. Speaker wire would be rather hopless (not to mention expensive) in that setup.
