Video cover art and naming convention

I use a standard convention for naming FLAC files and keeping the cover art.  What do you guys recommend for storing video?  I am working on backing up my DVD collection just as I did my CD collection and would like to create the same CD cover art view for the DVD cover art.  I know it's possible but would like some suggestions for how I should name my files (use folders, etc.) and how the cover art must be stored?  It seems like I would have to keep one item per folder--except for an episode of the Simpsons, for example, which would have one cover piece for an entire season (so all episodes in one folder).

Speaking of that--does anyone know where I can download a high quality/resoulution copy of the cover art for the most recent 2 seasons because I bought the "character head" versions and can't really scan the 3d representations of the characters?
