Is there a place to set global settings when converting audio?

I want all D:\ITunes\*.wav to be converted to G:\ParkingLot\*.flac when I choose to convert.  Seems the default is .ape into the same directory the .wav files live.

If you select "Convert Format" in the library tools menu, and the small Convert Format box shows up, there is a "Options" link at the bottom of it, which will let you specify the location.
Regarding the format, the Convert Format action window should remember the format you used last, so switch it to "FLAC Encoder" once and it'll remain on that setting for your future conversions. Note that it'll only remember this once you actually converted a track.
