[REQ] add "5.1 in a ...." option for output formats with more than 8 channels

It would be even nicer if it were possible to separately pick a mix target Vs the output format however I guess this might much easier/quicker to implement given that "5.1 in a 7.1 container" already exists

Use case is to better support multichannel setups with some active speakers (and/or multiple subs) but which aren't 7.1
