Sync to iPod (excluding certain files)

Is there a way to either exclude certain files (or define include files) when doing a sync to an iPod?

My music folders contain mp3 & jpg files, but I don't want the jpg files to be synced to the iPod.  

Also, am I correct in assuming that the iPod uses embedded album art and not folder.jpg?
