Can't get surround to work with Mac version.

I know surround on the Mac is a lot flakier than in Windows, but I can't get it to work at all with MC.  All of my 5.1 tracks are playing as stereo, and in the DSP output format screen the 'Source:' at the bottom shows the source as being stereo even though I am play back tracks with 6 channels (even per the MC Channels tag).  If I fire up XBMC I get 5.1 surround output, so I know my setup is capable of doing it.

Any suggestions?

Try going to DSP Studio and change the channel selection to "source number of channels" this option worked for me.

Does your setup support 5.1 PCM? Or just Dolby Digital & DTS? Are you using 5.1 PC speakers, or are you using hdmi to output audio to a home theatre receiver?

I believe SPDIF is somewhat limited with respect to HD audio (ie, true HD, not necessarily the likes of DD5.1 ... sorry, do not have a reference other than the AVS forums).  Are you bitstreaming to your Denon, or delivering PCM?  Have you tried HDMI?
