Is it necessary to upgrade each version of MC in sequential order or can you skip a couple of versions and upgrade to a later version that will include some of the smaller updates?  For instance the last two versions have nominal changes that are of little interest or use for me. Can I upgrade later to a version that has more substantial changes that will also incorporate the previous versions?

No, it is not necessary... just grab the latest version, or whatever version you want.
