There are many thumbnail text settings, but I have the following question:

Is it possible for example to show the current playing track title underneath the thumbnail?

Thumbnail text is used in Categories and Panes views to customize what you see for each thumbnail.

What you're asking for wouldn't be useful there... so you must be asking about the album cover area in Playing Now?  As far as I know, you can't put any text there at all.  Of course you can fully customize the playback text in the display area up top.  Right click > Customize Display.
