Media Network Setup - What Am I Missing ...?

Hi
  
I'm running 21.0.25 on two Mac minis (both 10.10.5), both with wired Ethernet connections,
one is the library server (but also has a USB DAC attached),
the other is a client with a USB DAC attached (the same model as the one attached to the library server).
  
I'm trying to play a ripped CD, uncompressed - AIFF, on the client.
It plays fine via the DAC directly connected to the library server.
When I try to play it on the client with the media-network-client convert option set to "don't convert audio",
I get the message "something went wrong with playback".
If I sent the option "convert if necessary" (to 24 bit PCM) it plays fine.
  
However, why is that?  Why should the audio need converting from 16-bit to 24-bit to play on the client?
