I have a collection of literally 1,000s of shows by the Grateful Dead. Each is tagged and displays in a continuous scroll. Is there a way to have MC to sort into sub-folders by year?

Sure.  Make a new view.  Or copy an existing one.  You can copy an existing view by dragging it up to the Audio container.  Once you get there (and release the mouse) it will as if you want to move or copy.  Choose copy.  Then you'll have a copy to work with.  You can rename this copy whatever you want.

Right click on the view and choose "customize view".  From there you can do a lot of different things.  Look at the area on the left that shows the categories in your view.  You probably have album and maybe artist.  Add a new category, and set it to use the Year field.  Now Year will appear as the first category (assuming you made it the first in the list).  You could even have month or something else as the next category if year isn't enough to subdivide them.

Since this is really only for your Grateful Dead shows, you can further customize your view to show ONLY albums that are by The Dead.  But that's getting slightly ahead of ourselves.
