I have been trying to do this forever but decided to ignore it.
Now I am revisiting.
How can I get rid of the all series in this view?

If you go to
Options -Theater View
and under Items to show click on the item for the view you showed, then click on the Down Arrow at the end of the Options box and see if
Display "All" as a choice is checked.
