I am running MC on an iMac (2017 version). When moving a tag/field (say composer to artist), this works fine in JRiver and the composer tag/field subsequently appears blank and the artist field has the information, however both Sonos and dBPoweramp show that the composer field is still populated with the old information (but the artist field has been correctly written to, basically composer and artist are now duplicated tags). So, I am manually deleting the composer tag by simply inserting blanks using MC. This works, but is not ideal of course

Your problem is a bit like the one I just mentioned on a new post.
I have the impression that MC manages the metadata oddly.
It seems that some changes made are kept in the MC library without always modifying the track files of the Music folder. This causes duplication with sometimes unexpected results.
