I noticed that when using Microsoft Outlook clicking the green maximize button causes Outlook to open in a new desktop (see attachment). Can Media Center do this too? If so how? If not can this be added as a new feature?

No, MC doesn't support macOS' standard window management.  I've been asking for this for years.  There have been gradual improvements on macOS like using native screen rendering since v27, but still no movement on this feature.

It's likely because on Windows, Mac and Linux that Media Center uses its own system for window drawing and for everything else, like Steam and other apps do. It's the same reason why the top bar menus don't use native macOS menus, instead using its own.
