Media Center bitstreaming DSD512

Does Media center bitstream DSD512 files without any conversion? If so and what version enabled the bitstreaming of DSD512 files?

macOS only supports DSD via DoP, and I've never seen any DACs that have a PCM sample rate high enough to support DSD512 (which would need to be at 1411.2 kHz or higher). The max supported DSD I've seen with various DACs on macOS via DoP is DSD256. To playback DSD512 on macOS you'd have to convert it to PCM or DSD256 (or whatever max DSD your DAC supports via DoP).

Windows and Linux can use native DSD (in addition to DoP), which allows up to DSD512 to work, but there's no way to do it on macOS.

I've been able bitstream DSD On my MAC Pro (Sonora) if the it is set to custom DSD256 using an IFI IDSD Pro.

No, your DAC isn't capable of bitstreaming DSD512 via DoP, there's nothing Media Center or JRiver or your DAC manufacturer can do about that, it's a limitation of the Mac OS and the DAC hardware. If you want to bitstream DSD512 without any conversion you'd need to use Windows or Linux with native DSD.
