Could someone please help me.  I've been ripping mp3s from cds using Media Jukebox 8, at variable bit rate (I thought this would be best because highest quality).

But I'm trying to figure out how to set the sampling rate to 44.1 khz.  Is there any way to do this recording at variable bitrate?  How about non-variable, e.g. 128kps?

My problem is I have an AudioTron hooked up to my stereo, and I want to use the S/PDIF out, but it's only compatible at 44.1 kHz sampling rate.  My mp3s won't output through it, and I'm thinking that's because they're not ripped at 44.1 kHz sampling rate.  How can I do this?  Does Media Jukebox support this?

44.1 kHz IS the default sampling rate for ALL 16 bit audio, but is not to be confused with the encoding/playback rate.

Well, they could be 48 kHz or 22 kHz, but I doubt it. There's something else going on.

I believe so, but the soundcard & drivers need to support it. If it does then look in MJ under Tools/Options/Playback/Output. Is there a SP/DIF option? This is a gray area I don't know much about (SP/DIF).

You can check the sampling rate of your mp3 files from
MJ by using properties on an mp3 file and looking at the
Format tab; look for something like:

44.1 Khz Joint Stereo

If you're ripping (digitally) from a CD with the MP3 Encoder
or the MP3 Encoder VBR (both of which use the LAME
encoder) you will be encoding at the source sampling
rate which is always 44.1 kHz.

If you are recording from some other source it's possible
to tell the encoder to resample at 44.1 kHz by using the
Custom quality for the MP3 Encoder VBR and specifying
a Command Line which includes --resample 44.1,
e.g.: --alt-preset standard --resample 44.1

Roar, I checked the format tab like you said, and sure enough it shows it IS 44.1 Khz.  So as Xenno thought, something else is going on (probably with my AudioTron).  I'll figure it out with their tech support - meanwhile, I've ruled out the problem being with my mp3s.
