best encoding settings when recording

I have an old btx or whatever tv card.  it basically captures the video and that's it, the computer has to do the rest.  now i have an athlon 64 3000+, and 1 gig of ram.  I was wondering what you guys thought the best encoding setting were for size/speed.  I always lose audio sync, so obviously I'm not doing it right  :-\.
