What I want to do:

While listening to a song, in the display section at the top of the app, be able to tell how many times I've heard the Artist, when the last time I've heard the Artist, and when the last time I've heard the Album.

How do I do this?

As it is now, I'm able to tell when I've heard the SONG last [Last Played], and how many times [Number Plays]...but I can't get the app to see Artists or Albums.

The short answer is that you can't. There are some people that do some fancy stuff by exporting their database and running scripts on it to get this sort of data, then import this all back into their database. From what I can discern, it's not simple to do.
If you'd like further info as to why this can't be done natively, try a forum search for "relational database"...it should give you more than you want.
