Who don't love french fries?
I have been playing around with french fries for years.
how do you make a perfect french fry?
recently I bought about 60lbs of rib eye stakes and cut some the extra fat off of it, and stuck it all in a 5 quart pot and rendered the fat down so i could use it for frying french fries.
I bought a commercial french fry cutter that that perfectly cuts the fries to the 1/4 in size

when I see fries that are cut into wedges I always think of back in the 60's when my dad and I would go down to a small corner ma and pa place that cooked these small potato treats that my dad loved so much.
maybe that's why I have a special fondness to the simple dish we call potato wedges and french fries.
I think that foods that give us our fondest memories are the ones we truly love deep down in our hearts.
