Directory rule and file name rule allows you to create a custom rule.
You must hand type the name of the fields.
A pick list with all the fields (as available in e.g. the expression editor) would be  convenient.

I think Vincent is referring to setting the folder rule for ripped files in Tools/Options/File Location/Folder rule.

I agree with Vincent that a pick list would be good..
