I found this table which shows the video formats supported by WP8.

Which setting should I use under the MC DLNA video conversion for WP8 to be able to play my videos?

I want one that streams immediately not one that has to do a full conversion first, but so far I've not had much luck

There are only a few formats that will stream. Mpeg2, Mpeg4 in a mp2ts container and wmv.
From that chart, I'd guess that mpeg4ts won't work but I'd try that first since it's the only conversion that can multithread.
Your only other choice is wmv since it doesn't do mpeg2.
