My music 90,000+ songs, all are labeled like this:
Gabriella Cilmi - Sweet About Me.mp3
Consequently, importing them leaves the Artist column empty and the song title ends up being the entire filename.
Is there any way to tell MC how to parse the filename into the right Title and Artist?

Yes, the "Fill Properties From Filename" tool will do just this.
Select your files, right-click them and choose: Library Tools → Fill Properties From Filename…
 
You can then create a template to specify how they are named.

For your example, you would use Filename: [Artist] - [Name]
You can also add rules based on the directories that the files are in, to add album tags if they are missing. (assuming the files are in a folder based on the album name)
 
Right-clicking in the template boxes will let you select the fields you want from a list.


You might want to do a few at a time first, rather than your entire library, and I would recommend creating a library backup before making these changes just in case anything goes wrong. (File → Library → Back Up Library…)
