I prefer to set my track numbers in xx format - 01, 02, etc. In MC13, when I manually perform an audio analysis, it replaces '01' with '1'. Is this behavior different in MC14? May I request it honor the current track format?

Check the tag. It's possible you have 01 in the MC library but 1 in the tag, or vice versa.
Under Library Tools, you can do update tags (from library) or vice versa. Try a few before you do very many.

I checked. I've always had '01' in the tag, when I set it up and when I set up my initial MC library. When I update library from tags, it still displays as '1' in MC.
