Manual Method: On amazon - right-click on the album art and choose copy, then in MC right-click and choose Cover Art -> Past from Clipboard.  Voila!

Automatic Method: There are a number of automatic scrapers out there that can pull art from Amazon and other sources.  MC can get art from its own online database, try right-clicking on some songs and choose Cover Art -> Get From Internet...
