Would it be possible to allow custom values for both Media Type and Media Sub Type?

I've just done an import of all my stuff after a clean install of Win8.1 and MC19 as follows:

\\nasshare\films with Media Type = Video / Media Sub Type = Film
\\nasshare\music with Media Type = Music
\\nasshare\pictures with Media Type = Picture
\\nasshare\shows with Media Type = Video / Media Sub Type = Live Show
\\nasshare\TV with Media Type = Video / Media Sub Type = TV Show
\\nasshare\videos with Media Type = Video / Media Sub Type = Home Video

only to find that these 2 fields are hard-coded to certain values, so I can't use some of the above! I don't want any of the above grouped together in Theater View, hence having separate folders on the NAS for them, and this structure should be seen in Theater View, in that I have the Video roller, which drills down to;

Films
Shows
TV
Home Videos

This topic has been long debated, and generally the results are that new Media Sub Types are added periodically based on demand.  Until then, your best bet is to create a new field where you assign your types, and then base your views first on the non-emptiness of your field, and when it is empty, falls back to the standard field.

FWIW, the only Media Sub Type missing for your structure is "Live Show", everything else can be represented already with minor changes (ie. Films = Movies), so without knowing what it actually means, maybe you can simply use another one which already exists for it?

Yeah I went with that in the end Hendrik, and used Other for the Live Shows.

Maybe another label can be added, as there's nothing at the moment to label a concert or comedy show (something like Stand-up). They're obviously neither a movie or a TV Show.

Technically, they need to have the Media Sub Type as Movie so that it can scrape correctly.  I then have Stand Up and Live Concert in Genre and use that to sort them out from "regular" Movies in my views.
