With the lastest Mac build (19.0.124) connecting to my PC running the latest version there (19.0.128) as a client, music is always being converted.
 
Tools → Options → Media Network → Client Options → Audio Conversion is set to "Convert audio if necessary" - and it should not be when streaming music from the PC. (all encoded as ALAC)
 
Instead, the preference acts as if I had "Always convert audio" selected.
 
Streaming works (and is much more responsive) if I set the preference to "Don't convert audio" - but I'm not sure that there's support for all of the filetypes that the Windows version supports in the Mac version yet, so I would rather use the "convert if necessary" setting.
