I'm a newbie and can't find anything on how to do this easily , e.g. Make the Artist "Rolling Stones" rather than "The Rolling Stones". Do I need to go and change each tag of each album of each artist?

You can use "ignore articles" to achieve the desired effect in most cases.

If you want to actually remove "the" instead of ignoring it, you can use find and replace.
- fist highlight desired files in MC
- Right click-->Library Tools-->Find and replace
- Make sure artist and album artist are checked
- replace "The " with nothing

There are also expressions you can use to move "the" behind the artist to make it "Rolling Stones, The"

Nothing

You would have to select the files that need the 'find and replace' and not apply it to your entire library.
An alternative would be to replace "The Rolling Stones" with "Rolling Stones"

Thanks all for the comments. It appears that the "Ignore Articles" function under "Sorting" does 99% of what I wanted to achieve.
