If I delete a tag from Options>Libraries and Folders> Manage Library Fields does it remove the tag from the actual files or just from the MC Library

I think it must because baking up after seems to backing up my entire library

I had a Custom Tags, Composition , Movement which I want to replace with Work , Part which is compatible with MusicBrainz and hence SongKong for adding these tags automatically, but I am concerned that the old Tags will still be in the file , I have no real way of telling (any ideas?)

Try viewing your tags outside of MC for an 'independent' view. I use MP3Tag. You'll need to add your custom tags to the 'view window' but you can see what's there and move data between tags etc. This could be handy if you deleted a tag from the MC library (although you could always re-add it).
