Is there a way to start MC minimized to tray?

I guess the subject line says it all.   I'm using a third party module and plugin to control MC, and don't want to see the MC gui.   Help appreciated.  Thanks.

Just run Media Server.  Tools/Options/Startup.  See the wiki on "Servers".

The GUI still seems to make an appearance.  Do you suppose I could create a "null" mini skin and start in mini mode?

Try the settings again.  Just start Media Server.

I've got it set to start in server only mode.  So then would I execute jrserver.exe?  Because I have the plugin pointed to Media Center 15.exe

It should talk to MC15.
