Conversion cache & stacks question

I'm starting to look at the conversion cache a bit.  It would be great to have my 20K FLAC files ready to go as mp3 files for quickly synchronizing my music out.  Here are a few questions and concerns I hope others can help answer:

1. Are we only given one conversion cache quality at a time?  Can MC create a high and low/medium version for the same files?
2. Cover art does not get added to the mp3s, meaning iTunes won't get the benefit if I import these for my iPhone.  This is obviously a deal breaker as I don't want to give up my cover art on my mobile device.  Is there a way to enable copying cover art?  Ideally, this could down-size the cover art to, say, 640x640 pixels if it is larger to save space and maintain consistency.
3. Ability to map fields (Ben's Rating -> Rating)
4. Simply the ability to have multiple conversion caches with different settings (different quality, different field mapping, etc.)

I may add to your request:
* Full encode dialog for advanced convertions (to be able to convert to lame -v2 for example, instead of just 128kbps or 320kbps)
