I try to added different sorting parameters to the "Showroom" (e.g. sort by Genre), however each and every time the "Showroom" come back as the same as before.

Can it be done or What have I done wrong?

No, sort settings have no effect on a Showroom List Style. It's not actually a List Style, but a completely independent view that's unaffected by settings. It was moved to the List Style menu so it can be selected anywhere without having to be explicitly included in the configuration. The only thing you can do with it is restrict the albums included using Rules for file display.
