Here is what I'd like, will someone let me know if it is possible and if so, how?

Lets say I have a comp disc with two Cds, 6 tracks on each. I'd like to see the comp as a single CD in "Album Cover View" (As opposed to two of the same covers). Additionally, I'd like the track numbers to go from 1-12.

The problem is that if I rip to two folders so I can keep the tracks from different CDs straight, the second CD shows up as incomplete since the tracks start at 7 instead of 1...

Am I approaching this the wrong way?

Move one of them into the other album.  Put the tracks in the order you want them by dragging them.  Then do Properties/Tools/Fill track numbers from list order.

I was already aware of the technique you mentioned above (extremely handy!!!)

I re-read my message and realized that I left out one other part. I'd still like to track what tracks are on what CD. Is this something I'll need a custom field for? I was hoping I could just keep them in separate folders, that way I could sort by filename, grab and go...but having tracks start with numbers other than 01 causes a CD to appear incomplete...
